Roasted Salmon

I love holiday celebrations! I love my mom! I love cooking for my mom on Holidays! (Big Shock)

Made this Salmon, courtesy of Everyday Food, and it’s pretty dope. Super easy, super delicious, and super quick… Did I say it’s just pretty super?

So go to your fish monger, seafood counter, or a river in Alaska and get an entire side of salmon. My salmon was 2.5lbs and wasn’t on sale! EESH!! But mom is always worth it!

Preheat your oven to 425. Put the salmon, skin side down, on a rimmed baking sheet. No parchment necessary. Season with salt and pepper.

Take 1/2cup plain Greek yogurt, 2 Tbsp of Dijon Mustard, 2Tbsp Dill, chopped, and 2Tbsp Parsley, chopped. Stir to combine. Spread over the salmon.

Roast for 20 minutes, let cool slightly, and enjoy!
